A Different Sort of Wedding Cake
Thursday, September 15, 2011 at 11:41AM Earlier this year we were lucky enough to photograph Holly and Chris's wedding. It was memorable for a number of reasons but there was also a first for us. It was the first time we had ever seen a cheese cake. Not one of those New York Cheese Cakes made with the Graham Cracker crusts and filled with a cream cheese filling but a cake made from actual wheels of cheese.
They had purchased their wedding cheese cake from one of our neighbours here on Pine St, Dags and Willow. They are purveyor's of all things delicious especially cheese and make several of these cakes a year. Kelly and Steve, co owners of Dags and Willow, help clients design their cake, taking into consideration the number of guests, budget, aesthetics as well as preferences. The first WWCC (Wedding Wheel Cheese Cake) which was Holly and Chris's cake was made from a wheel of Apple + Smoked Cheddar, Pecorino Toscano and Fourme D'ambrt. (Their cake has the couple on top) The second WWCC is a four wheel affair made from Niagara Gold, Cashel Blue, Fleurmier and Champayeur. Both cakes are presented on one of Dags and Willow's exclusive hand made cheese boards, which makes a rather nice reminder to take home after all the cheese is gone. This appeals to me, especally as a cheese lover, as it's not often you have anything but your wedding photographs to remind you of your big day. Having a cheese board as well would kind of cool.
